野生与人工养殖鸭绿江斑鳜肌肉营养成分及品质评价

摘    要:对野生及人工养殖鸭绿江斑鳜(Siniperca scherzeri Steindachner)的肌肉营养成分和营养品质进行了分析。结果表明,野生斑鳜肌肉粗脂肪含量明显高于养殖斑鳜,水分、粗蛋白和粗灰分的含量与养殖斑鳜相近;野生和养殖斑鳜的氨基酸组成基本一致:野生斑鳜必需氨基酸和鲜味氨基酸含量分别为30.89%和27.18%,养殖斑鳜必需氨基酸含量为30.35%-32.35%,鲜味氨基酸含量为28.68%-28.69%;野生斑鳜、杂鱼喂养以及人工饲料喂养斑鳜的必需氨基酸指数分别为72.04、77.03和70.04,其必需氨基酸构成比例符合FAO/WHO的标准;按照氨基酸评分(AAS)和化学评分(CS),野生与养殖鸭绿江斑鳜的限制性氨基酸均为Val和Ile;野生斑鳜脂肪酸中EPA和DHA含量分别为4.18%和2.61%,明显高于养殖斑鳜同种脂肪酸的含量。综合分析认为,鸭绿江斑鳜是营养价值和经济价值比较高的优质鱼类。

Abstract:Nutritive components and nutritional quality in muscles between wild and farmed S. scherzeri Steindachner were investigated in this paper. The results showed that the content of crude fat in muscle of wild S. scherzeri Steindachner was much higher than that of farmed S. scherzeri Steindachner, while no obvious differences were observed in the content of moisture,crude protein and crude ash between wild and farmed groups. The contents of essential amino acids and delicious amino acids in dry samples from the wild and farmed stocks were 30.89%,27.18%;30.35%,-32.35%, 28.68%-28.69% respectively. The essential amino acids index(EAAI) of the wild stocks, farmed by wild fish and farmed by diet were 72.04,77.03 and 70.04 respectively, the constitutional rate of the essential amino acids (EAA) met the FAO/WHO standard. According to the amino acids score(AAS) and chemical score (CS), the limited acids of the wild and the farmed S. scherzeri Steindachner both were Val and Ile. The contents of EPA and DHA in fatty acids of wild stocks were 4.18% and 2.61% respectively, which were much higher than those of the farmed stocks. It could be concluded that S. scherzeri Steindachner belong to super cultured ones involed in high nutritional and economic value, and worth to explore for food study and stipulation of germplasmic standard.
