甜菜碱对中华鳖肌肉和裙边食用品质指标的影响

摘    要:选用780只中华鳖(Trionyx sinensis)成鳖分两组,分别饲喂添加0.6000mg/kg甜菜碱的饲料,进行200-500g生长期的养殖试验,试验结束后,解剖中华鳖,取腿肌和裙边样品,分析肌肉中肌苷酸,肌酸酐,肌酸、氮基酸含量和裙边中胶原蛋白含量等生化指标,结果表明:甜菜碱使肌肉中鲜味肌苷酸,肌酸酐,肌酸和游离甘氨酸含量分别增加了14.06%,25.34%,12.80%,8.95%;裙边粘度及其相关的总胶原蛋白和可溶性胶原蛋白含量分别提高了44.37%,25.34%,12.80%,8.95%;裙边粘度及其相关的总胶原蛋白和可溶性胶原蛋白含量分别提高了44.37%,16.91%,19.13%。

Abstract:Seven hundred and eighty adult Chinese soft shelled turtles were allotted to two groups by weight and sex.The groups received the same basal diet supplemented with 0(control group),6000 mg/kg(treated group)betaine respectively from 200g to 500g weight of turtles.by anatomy,muscle and carapace samples were taken for biochemical canalysis,Results showed that betaine addition significantly improved the edible quality of turtles.The content of insonic acid,creatinine,creatine and free glycine in muscle increased 14 06%,25 34%,12 80% and 8 95% respectively.The carapace viscidity,related total collagen and soluble collagen content enhanced 44 37%,16 91% and 19 13% respectively.
