| 摘 要： | 采用一般营养物质测定方法及液相色谱仪测定氨基酸方法测定齐口裂腹鱼肌肉营养品质，结果表明：水分占80.90%，蛋白质16.35%，脂肪1.60%。灰分1.15%。17种氨基酸总量为干物质的78.48%。必需氨基酸含量占氨基酸总量42.76%，赖氨酸含量极为丰富，高达82.90mg/g干物质，齐口裂腹鱼高含量的赖氨酸可作为人类赖氨酸的强化食品，从而提高蛋白质的利用率。

| Abstract: | The nutritive composition in muscle of Schizothorax(Schizothorax)prenanti (Tchang)was analyzed and the nutritive value was conffirmed.It was showed that the muscle consisted of 80 90% moisture,16 35% crude protein,1 60% fat and 1 15%ash.The total content of 17 amino acids is 78 48% of dry weight,the essential amino acids accounting for 42 76% of total amino acids.The amount of Lysine was considerably high,reaching about 82.90mg/g dry weight. |
