摘    要:通过感官、化学、微生物学分析对0~10℃冷藏养殖大黄鱼鲜度和货架期进行研究,构建和验证了指数腐败货架期模型。结果表明,0~10℃冷藏养殖大黄鱼货架期终点时菌落总数、假单胞菌数、嗜冷菌数和产H2S细菌数分别为6.64~7.60、6.24~6.96、6.16~6.90、6.14~6.62 lg cfu/g,挥发性盐基氮和三甲胺分别为27.15~30.12 mg/100g和8.44~10.83 mg/100g。0、5、8和10℃冷藏大黄鱼的货架期分别为17.8±2.5、9.3±1.1、7.0和5.4±1.3 d,并用于构建指数腐败货架期模型。用0、3、7℃冷藏养殖大黄鱼货架期验证指数腐败货架期模型,相对误差为?6.1%~4.6%,显示该模型可以快速有效预测0~10℃冷藏养殖大黄鱼的剩余货架期。

Abstract:Freshness and shelf life of cultured Pseudosciaena crocea stored at 0-10 ℃ were examined by the sensory,chemical and microbiological analysis,and exponential spoilage shelf life model was developed and validated.Results showed that total viable counts,Pseudomonas,Psychrotrophs,Producing-H2S bacteria in Pseudosciaena crocea at the end of shelf life reached 6.64-7.60 lg cfu/g,6.24-6.96 lg cfu/g,6.16-6.90 lg cfu/g,6.14-6.62 lg cfu/g,respectively.Total volatile basic nitrogen and trimethylamine were 27.15-30.12 mg/100g and 8.44-10.83 mg/100g.The shelf life of Pseudosciaena crocea stored at 0,5,8 and 10 ℃ were 17.8±2.5 days,9.6±2.0 days,9.3±1.1 days,7.0 days and 5.4±1.3 days respectively,which were utilized to develop exponential spoilage shelf life model.The model was validated by shelf life on Pseudosciaena crocea stored at 0,3 and 7 ℃.The relative error was from-6.1% to 4.6%,indicating that the model was useful in effectively predicting the remaining shelf life of chilled Pseudosciaena crocea stored at 0-10 ℃.
