丝尾鳠肌肉营养成分测定与评价

摘    要:对丝尾鳠(Mystus wyckioides)肌肉的营养成分进行了测定,并对其营养价值作出评价。结果显示,丝尾鳠含肉率为68.39%,肌肉中水分含量为78.92%,粗蛋白含量17.85%,粗脂肪含量0.80%,灰分含量2.43%;肌肉中水解氨基酸总量为13.00%,含量最高为缬氨酸(Val),占1.24%,最低为胱氨酸(Cys),占0.41%;必需氨基酸含量为5.80%,占氨基酸总量的44.62%。依据1985年FAO/WHO推荐的蛋白质模式为评价标准,计算得出学龄前儿童、学龄儿童和成人3种不同人群水平的氨基酸价(AAS)分别为176.26、255.69和513.82;第一和第二限制氨基酸都是亮氨酸(Leu)和赖氨酸(Lys)。研究表明,丝尾鳠是一种高蛋白质、低脂肪、有开发前景的珍稀和优质鱼类。

Abstract:Nutritional components in the muscle of Mystus wyckioides were measured and analyzed. The results showed,The ratio of flesh in the body was 68. 39% ,and the average contents of moisture,crude protein,crude fat and minerals in the muscle were 78. 92% ,17. 85% ,0. 80% and 2. 43% ,respectively.
