三角鲂与团头鲂鱼体营养成分比较分析

摘    要:对三角鲂与团头鲂鱼体常规养分、氨基酸、脂肪酸和微量元素的组成和含量进行了比较分析。结果表明:三角鲂肥满度极显著低于团头鲂(P<0.01),去内脏比显著高于团头鲂(P<0.05),比肝与肠脂比两指标极显著低于团头鲂(P<0.01);三角鲂肌肉水分和粗蛋白含量显著高于团头鲂(P<0.05),肌肉粗脂肪含量显著低于团头鲂(P<0.05);三角鲂肌肉中必需氨基酸含量、半必需氨基酸含量和氨基酸总量均高于团头鲂肌肉中含量,但两者之间三指标差异均不显著;三角鲂肌肉含高不饱和脂肪酸量较多,其不饱和脂肪酸占脂肪酸总量的比值明显高于团头鲂;三角鲂肌肉中微量营养元素含量与团头鲂肌肉无显著差异(P>0.05)。

Abstract:This comparative research was conducted to study the contents of common nutrients,amino acids,fatty acids and trace minerals in muscles between M.terminalis and M.amblycephala.The results showed that the fatness of M.terminalis was significantly lower than that of M.amblycephala(P<0.01),the weight ratio of M.terminalis was higher than that of M.amblycephala significantly after entrails removed(P<0.05),the liver ratio and intestine fat ratio of M.terminalis were lower than those of M.amblycephala very significantly(P<0.01);the moisture and crude protein contents in muscles of M.terminalis were higher than those of M.amblycephala significantly(P<0.05),the crude lipid content in muscle of M.terminalis was lower than that of M.amblycephala significantly(P<0.05);The EAA,Semi-EAA and total amino acids amounts in muscle of M.terminalis were higher than those of M.amblycephala;The muscle of M.terminalis was rich in high unsaturated fatty acids,the unsaturated fatty acids/fatty acids ratio of M.terminalis was higher than that of M.amblycephala.There were no significant differences in trace minerals contents of muscle between M.terminalis and M.amblycephala.
