远红外干燥香菇及苹果的机理研究

摘    要:利用远红外与热风对流干燥试验箱对香菇、苹果作了干燥机理方面的试验,找出了远红外干燥香菇比热风干燥快和节省能耗的原因及远红外对苹果的穿透能力和远红外不宜干燥粗大物料的原因,对两种干燥方式的干燥速度作了理论分析。

Abstract:In this paper tests of drying mechanism on lentinus edodes and apple have been made by the far-infrared and convective hot-airflow drying oven. In each drying test, internal and surface temperature of lentinus edodes, internal temperature and moisture gradient of apple were measured.The reason that lentinus edodes was dried by far-infrared is faster and its power consumption is lower than airflow was found. The penetrate ability of far-infrared on apple was obtained. Bulky material doesn't suit with the far-infrared drying. The dehydrating rates of two drying patterns on lentinus edodes were discussed theoretically.
