摘    要:食品中微生物检验检测是衡量食品安全质量的重要指标,通过探讨影响食品微生物检验检测准确性的主要因素,如人员、设备、环境、样品、培养基、标准菌株及检验检测方法等,旨在通过有效控制相关因素,保证该类检验检测工作的质量,为保障公众身体健康、避免社会经济损失和提高我国食品安全质量提供思路。

Abstract:Microbiological inspection and testing in food is an important index to measure quality of food safety.Main factors affecting accuracy of food microbiological inspection and testing were discussed,such as personnel,equipment,environment,samples,culture medium,standard strains and inspection and testing methods,etc.,in order to ensure quality of such inspection and testing work through effective control of relevant factors,so the new thought for protection of public health,avoiding social and economic losses and improving quality of food safety in China was provided.
