原薯制浆机机理与性能试验

摘    要:针对原薯在传统制浆方式中存在的块茎破裂面积大、淀粉及其营养物质游离率高和薯类风味物质流失的缺陷,对原薯制浆的机理进行研究,优化设计了具有二次剪切、有序破碎功能的原薯制浆机,并进行相关性能研究试验。研究结果表明:采用二次剪切破碎技术,可以有效降低淀粉游离率;二次剪切的切割刀头转速越高,浆料粒度减小;出料筛网孔径尺寸对浆料的粒度和淀粉游离率影响最大。

Abstract:Aiming at defects of large tuber broken area,high dissociation rate from starch and its nutrients,and loss of potato flavor substances in traditional pulping method,raw potato pulping machine with double shear and sequential breaking function was optimized by mechanism research and structure design,and relevant performance tests were carried out.Results showed that,starch dissociation rate could be effectively reduced by using double shear breaking technology,pulp particle size decreased with increase of speed of cutting tool head during double shear breaking,hole size of sieve had great influence on pulp particle size and starch dissociation rate.
