罗非鱼片热泵干燥及干冷互换工艺的实验研究

摘    要:为了获得罗非鱼干燥过程的基本特性,利用热泵干燥装置进行了罗非鱼片的干燥实验,得出了在不同干燥条件下的干燥曲线,较全面地反应了罗非鱼片在干燥过程中,干燥风速和鱼片厚度对干燥时间的关系。结合冷冻过程的特点,将冻结工序渗透到干燥环节,采用干冷互换的干燥工艺以改善罗非鱼的干燥性能,以剩余含水率和复水率为指标进行了相应的实验。实验结果表明:在相同的干燥时间内,加入冷冻环节能相应降低鱼片的剩余含水率,且产品的复水品质较好。冷冻时间间隔和冷冻的温度均会对剩余含水率和复水率产生影响,在本实验的范围内,当冷冻时间间隔为4h,冷冻温度为-35℃时,样品的剩余含水率较低,复水率较高。
