气泡清洗方式清洗叶类蔬菜的试验研究

摘    要:以叶类蔬菜为研究对象,以自来水为清洗介质,以气泵为气泡产生源,在自制的由透明玻璃和不锈钢板搭建的试验台上进行模拟试验.研究了给定气泡式清洗槽中的蔬菜损伤率与气泡强度的关系、最大清洗体积比与蔬菜密度的关系、洗净率和浊度与清洗时间的关系、清洗液浊度与清洗量和洗净率的关系等.试验结果表明:叶类蔬菜可以得到有效清洗,清洗损伤率与气泡强度正相关,清洗的理想时间为3min,最大清洗体积比与蔬菜的密度、清洗液浊度、清洗量呈正线性相关,清洗液在浊度允许范围内可以连续使用,洗净率可达到70%以上.

Abstract:An air bubble flow washer was made of light transmittance glasses and stainless steel sheets with air pump. Leafy vegetables were washed with sanitation water. Damage rate, maximum washing volume rate, cleaning rate, washing time, water turbidity, density of vegetables and their relationship were studied in the self-made washer. It was concluded that leafy vegetables could be washed in such a washer. Damage rate had a positive correlation with air bubble intensity. Proper washing time could be shorted in three minutes, There was a positive correlation between maximum washing rate and density of vegetables. Water turbidity also had a positive correlation with washing vegetable weight. Washing medium could be reused and cleaning rate could be achieved above 70%.
