| Abstract: | The basic principles of cold storage and the changes of main physiological response of fruits and vegetables to ice-cold temperature are introduced in this paper. The present application of and advances on ice cold storage of fresh fruits and vegetables are overviewed, and the prospects of research and development of ice cold storage of fruits and vegetables are also put forward. |
