大豆种子几丁质酶对壳聚糖降解的研究

摘    要:大豆种子经甲壳低聚糖处理后发芽的提取物作用于DD值为71.1%的壳聚糖15分钟,可使其乙酸盐溶液的VDP值达60%以上。初步纯化的大豆几丁质酶可降解壳聚糖释放还原糖且较适合降解DD值低的壳聚糖,其作用于DD值71.1%的壳聚糖37.5小时可得到平均聚合度为4—5的水溶性甲壳低聚糖,得率为40%左右。

Abstract:The abstraction of germinated soybean to be treated by chitooligosaccharide acted with chitosan of DD 71.1% for 15 minutes, which could make the VDP of acetate salt solution increase over 60%. Soybean chitinase purified primarily of primary purification could free reduced sugar and easier to degrade chitosan which DD was lower, and when it acted chilosan of DD 71.1% for 37.5 hours, it produced water-soluble chitosin which average DD was 4-5, and its yield was about 40%.
