摘    要:发酵技术研究是探索冬虫夏草开发利用的重要途径。近年来相关的研究有了很大的进展,包括对冬虫夏草发酵无性型菌株的鉴定及筛选、液体发酵工艺的优化、固体发酵技术的开发和发酵产物的评价及应用等。就上述研究中取得的进展进行综述,并以近十年的进展为重点。

Abstract:Research on fermentation was a key to the utilization of Ophiocordyceps sinensis. The related researches had made a lot of progress in recent years, including studies on identification and selection of anamorphic strains, optimization of liquid fermentation, R&D of solid-state fermentation and application of fermentation products. In this report, the re- search advances on fermentation of Ophiocordyceps sinensis was summarized, with the emphasis on the advances in the last decade.
