摘    要:以不同产地的3份干辣椒为试材,测定其果肉中营养保健成分的含量。结果表明:原产于贵州地区的2份辣椒材料中的VC及膳食纤维含量显著高于产自河南地区辣椒材料;持水力和膨胀率则以河南辣椒材料显著高于贵州辣椒材料;辣椒中膳食纤维主要以不溶性膳食纤维为主。

Abstract:Content of nutrition and healthy components of pulp were studied on 3 dry pepper.The results showed that Guizhou pepper's content of vitamin C and dietary fiber were significantly higher than which were origined produced in Henan province;The expansion capacity and water holding capacity of Henan pepper were significantly higher than the Guizhou pepper;The content of dietary fiber was high in pepper,mainly with insoluble dietary fiber.
