电解水对叶菜杀菌效果的研究

摘    要:在实验室条件下研究了不同pH值电解水处理对小白菜等叶菜的杀菌效果。结果表明:电解水对叶菜表面的细菌和真菌都有良好的灭活作用;酸性电解水对叶菜表面的细菌和真菌的灭活效果好于碱性电解水,而强酸性电解水对叶菜表面的细菌和真菌的灭活效果好于弱酸性电解水,各试验处理中pH值3.0左右、ORP为1 000 mV左右、ACC为100 mg/L的酸性电解水杀菌效果最显著;同种电解水对细菌、真菌杀菌效果以及对不同种类叶菜的杀菌效果基本一致。

Abstract:The effect of sterilization on leafy vegetables with electrolyzed water of different pH values was studied under laboratory conditions.The results showed that the electrolyzed water has obvious effect on sterilization of bacteria and fungi which on the leaf surface;acidic electrolyzed water on the leaf surface of the inactivation of bacteria and fungi is better than alkaline electrolyzed water.Higher concentrations of acidic electrolyzed water had better effect on the leaf surface of the inactivation of bac...
