| 摘 要： | 对近年来国内外围绕蔬菜硝酸盐所展开的研究进行了综述,从蔬菜硝酸盐限量指标、累积实质、影响因子(包括内在因子如蔬菜种类和品种、肥料种类和用量和外在因子如蔬菜生长的环境条件)等方面概述了蔬菜中硝酸盐积累的研究状况,并指出了目前研究中存在的问题。最后对今后的研究提出了一些建议。
