摘    要:为探讨新疆南疆地区加工用杏品种制汁相关性状的评价标准,以轮台国家果树资源圃的库尔勒托永、小白杏、赛买提等18个品种果实为试材,比较南疆加工用杏品种制汁相关性状,结果显示18个杏品种平均单果质量为14.4~52g,出汁率为44.6%~62%,可溶性固形物含量为13.2%~25.4%,可滴定酸含量为0.67%~1.59%,维生素C含量为26.7~146.5mg/kg,糖酸比为4.35~17.09,可溶性糖含量为6.64%~15.52%。以目前生产中仅15%~25%的品种能达到的性状为特级指标,我们提出南疆制汁用杏品种的特级标准为:单果质量≥40g、出汁率≥58%、可溶性固形物含量≥21%、维生素C含量≥100mg/kg、糖酸比达到8.31~12.19且可溶性糖含量为7.81%~15.11%。

Abstract:In order to evaluate the juicing characteristics of the leading apricot cultivars cultivated in Xinjiang,18 apricot cultivars including Kuerletuoyong,Xiaobaixing and Saimaiti from the State Fruit Tree Germplasm Repository located at Luntai were evaluated.Results showed that their average fruit weight were 14.4~52.0 g,juicing ratio were 44.6%~62%,soluble solids content(SSC)were 13.2%~25.4%,titrable acid content(TAC)were 0.67%~1.59%,Vc content were 26.7~146.5 mg/kg,the ratio of soluble sugar content to titrable acid content ranged from 4.35 to 17.09,and soluble sugar content was between 6.64% and 15.52 %.Based on our evaluation results we would suggested that for juice processing the cultivar should have the average fruit mass≥40 g,juice ratio≥58%,SSC≥21%,Vc≥100 mg/kg,the ratio of soluble sugar content to titrable acid content ranged from 8.31 to 12,and soluble sugar content was between 7.81% and 15.11 %.
