| 摘 要： | 果实成熟是一个复杂的过程，伴随着果实成熟，果实本身发生了一系列生理生化变化，给贮存和运输带来不便。因此，本文概述了近年来的储藏保鲜技术和生物工程技术的研究进展，以期为指导果实的贮藏和保鲜提供依据。 |

| Abstract: | Fruit ripening is a complicated physiological and biochemical process ,and during fruit maturation,a series of biochemical changes occurred. A brief retrospection of the advanced storage technologies is reviewed.Meanwhile,the application of gene engineering to control fruit ripening is also discussed in this paper. |
