红松松籽壳色素理化性质研究

摘    要:红松松籽壳是红松种子的外种皮,在红松松籽壳中含有大量的天然色素,试验以红松松籽壳色素为对象,对其理化性质进行了研究。结果表明:红松松籽壳色素属于黄酮类化合物,耐光性和耐热性强,在pH为6-14范围内稳定。常用食品添加剂葡萄糖、蔗糖、氯化钠的加入对红松松籽壳色素影响较小,氧化剂、还原剂及苯甲酸钠不利于保持色素稳定性。金属离子K+、Na+、Ca^2+、Mg^2+、Zn^2+对红松松籽壳色素影响较小,Al^3+、Cu^2+和Fe^2+则对该色素有显著破坏作用。红松松籽壳色素是一种潜在的天然着色剂和理想的食用色素来源。

Abstract:Pinenut Shell from Pinus koraiensis is pine seed's exopleura,it has a large number of natural pigments,this experiment took pinenut shell pigments from Pinus koraiensis as an oblect,and then physical and chemical properties of the pigments were studied.The results showed that the pigments were flavonoid compounds and highly light-tolerable and heat-tolerable.The pH value affected stability of the pigments,but they were stable in range of pH 6-14.Common food additives like glucose,sucrose and sodium chloride...
