| 摘 要： | 运用正交试验对莲藕皮中多酚类物质提取工艺条件进行了优化,并通过提取物对油脂过氧化的抑制作用检测其抗氧化性能.结果表明较佳工艺是:按1∶10(g∶mL)料液比加入60%乙醇溶液,于80℃水浴中浸提2.5 h,重复提取2次.在此条件下多酚粗提物得率为2.374%,多酚纯度为52.99%.莲藕皮粗提物对油脂过氧化具有明显抑制...
