‘红盖露’苹果果实品质及营养成分分析

摘    要:为了解‘红盖露’苹果在伊犁河谷的栽培表现情况,对‘红盖露’果实品质及营养成分进行了分析。结果表明,‘红盖露’单果质量平均为190 g,果形指数0.89,果实硬度11.7,口感酥脆,可溶性固形物含量13.2%,固酸比2.67,酸甜适口。果实营养成分丰富,水解后还原糖13.2%,还原糖7.90%,糖酸比为4.26,果实酸甜;维生素C、维生素B1、维生素B2含量分别为25.3、0.18、2.0 mg/kg;矿物质元素含量较丰富,K、P、Mg、Ca含量分别为1 261.4、92.0、60.3、59.4 mg/kg,其次是Na、Fe、Cu、Zn,分别为5.3、1.8、1.0、0.3 mg/kg。红盖露苹果果实综合性状优良,适宜在伊犁河谷推广种植。

Analysis of fruit quality and nutrient components in Malus domestica ‘Gale Gala’
Abstract:In order to learn cultivation performance ofMalus domestica‘Gale Gala’ at Ili river valley, fruit quality and nutrient components ofM. domestica‘Gale Gala’ were analyzed. The results showed that single fruit mass was 190 g. Its fruit shape index was 0.89, and fruit ifrmness was 11.7. So it tasted crispy. The soluble solids content was 13.2%. The ratio of soluble solids content to acid content was 2.67, so the fruits tasted sour, sweet and delicious. The fruit nutrition was rich, content of hydrolyzed reducing sugar was 13.2%, and content of reducing sugar was 7.90%. The ratio of sugar to acid was 4.26. Contents of vitamin C, vitamin B1, vitamin B2 were 25.3, 0.18, 2.0 mg/kg, respectively. Contents of mineral elements were rich, too. Contents of K, P, Mg, and Ca were 1 261.4, 92.0, 60.3, 59.4 mg/kg, followed by contents of Na, Fe, Cu and zinc, which were 5.3, 1.8, 1.0, 0.3 mg/kg, respectively. These comprehensive properties ofM. domestica‘Gale Gala’ showed that it was very suitable for Ili river valley to promote.
