摘    要:通过探讨南方葡萄耐贮性能和生理生化特点,结合自身技术研究,运用HACCP体系对南方葡萄采后贮藏保鲜过程中可能出现的危害进行了分析。并确定了葡萄采收、预冷、分级、防腐保鲜处理、贮藏保鲜技术等关键控制点,制定了监测方法、纠偏措施、验证程序和记录要求,旨在将葡萄采后贮藏过程中的危害因素减少到最低程度,确保鲜食葡萄的安全性和良好品质。

Abstract:Through exploring the storability and physiological-biochemical characteristics of southern grapes and combining with technical research,the potential hazards of southern grapes in storage and fresh keeping were analyzed by using HACCP system.Such critical control points as grape harvesting,precooling,grading,preservative treatment and storage technology were determined,and the monitoring methods,correcting measures,verification procedures and requirements of records were established in order to reduce the hazards to the minimum during grape storage and ensure the safety and good quality of table grape.
