超微粉碎技术在食品工业中的应用

摘    要:超微粉碎技术是食品加工中应用最广泛的制备超微粉体的手段,已受到普遍关注.超微粉碎技术能提高物料的利用率,改善加工性能,使产品的品质更加优良.在简述超微粉碎技术基本原理的基础上,综合国内外的研究成果,对超微粉碎技术在食物资源的充分利用、新型功能食品的开发、传统工艺的改进、食品品质的改善、生产成本的降低等方面的研究进展作了介绍,展望了超微粉碎技术在食品加工领域的应用前景.
