毛竹笋热泵干燥特性及制品复重率

摘    要:利用热泵装置干燥毛竹笋 ,探讨干燥温度、切分厚度及干燥前预处理对干燥特性及制品复重率的影响 .结果表明 ,切分厚度薄且经漂烫 ,干燥温度高的毛竹笋干燥速度快 ,制品感官质量好 ;切分厚度薄且未经漂烫 ,干燥温度高的制品复重率高 .用 Logistic曲线拟合毛竹笋含水率随干燥时间变化的状态分布 ,幂函数拟合制品复重率的状态分布 ,决定系数 r2 分别达 0 .972 5和 0 .961 0以上

Abstract:Bamboo shoots were dried with hot pump device to detect the effects of temperature, cutting thickness and pretreatments on the drying characteristics and the product rehydrating rates. Rapid drying and high quality were obtained in the bamboo shoots of thinner cut with preheating and high temperature, and high rehydrating rates were obtained in the products of thinner cut with high temperature and no preheating. When Logistic curve was used to coincide with the state distribution of the change of bamboo shoot water content along with the drying duration and power function was used to coincide with the state distribution of product rehydrating rates, decision coefficients ( r 2) were over 0.9725 and 0.9610, respectively.
