莲子多酚的抗氧化活性

摘    要:以茶多酚和Vc为对照,采用Fenton反应法研究莲子多酚对羟自由基(.OH)的清除作用;采用邻苯三酚自氧化法研究莲子多酚对超氧阴离子自由基(O2.-)的清除作用.结果表明:在本试验含量范围内,莲子多酚对.OH和O2.-具有一定的清除能力;在含量相同的情况下,莲子多酚对O2.-的清除能力比对照茶多酚和Vc强,对.OH的清除能力比茶多酚和Vc弱.对莲子多酚抗油脂自动氧化能力进行研究的结果表明,莲子多酚具有一定的抗油脂氧化活性.

Abstract:Using tea polyphenol and Vc as the control, the effect of lotus seed polyphenol on scavenging ·OH and O_2~(·-) was studied with Fenton reaction and pyrogallol autoxidation methods. The results showed that lotus seed polyphenol had certain ability to scavenge ·OH and O_2~(·-) with various concentrations. When concentrations were the same, lotus seed polyphenol had stronger ability than tea polyphenol and Vc to scavenge O_2~(·-), but weaker ability to scavenge ·OH. In addition, the oil anti-oxidation of lotus seed polyphenol was studied. The results showed that lotus seed polyphenol had certain ability on anti-oxidation of oil.
