不同色稻的精米与米糠中矿质元素的含量

摘    要:选用有代表性的不同种皮颜色类型的36个水稻推广品种和种质资源,比较分析了不同环境(季节、地点)条件下,精米与米糠中Se、Cu、Fe、Zn、Ca和Mn6种矿质元素含量的差异、变化趋势及其相关性.结果表明:(1)精米中6种矿质元素的平均含量排序为:Ca>Mn>Zn>Fe>Cu>Se,其平均含量分别为65.809、9.915、7.988、6.025、2.205、0.024μg·g-1;米糠中为:Ca>Mn>Fe>Zn>Cu>Se,其平均含量分别为297.221、125.705、62.189、26.761、14.580、0.061μg·g-1.(2)6种元素在米糠中的含量都显著高于其在精米中的含量,其中,Mn在米糠中的含量是精米中的13.07倍,Fe为12.76倍,Cu、Ca、Zn、Se分别为7.48、5.07、3.56、2.71倍.(3)除黑米精米中Ca含量极显著高于白米、红米精米,白米米糠中Mn含量极显著高于黑米、红米米糠外,其余各元素含量在不同种皮颜色类型间差异不显著.(4)在3种环境下均表现显著正相关的包括:精米Zn与精米Mn、米糠Fe与米糠Zn、精米Se与米糠Se、精米Mn与米糠Mn,而米糠Fe与米糠Ca显著或极显著负相关.

The contents of mineral elements in polished rice and bran of various colors
Abstract:Thirty six popular rice varieties and germplasms with various typical colors of seed coat, which were planted under various environmental circumstances (i.e. seasons and sites), were employed to study the contents of Se, Cu, Fe, Zn, Ca and Mn in polished rice and rice bran, as well as their variation trend and correlation. The results were as follows :(1) The mean contents of six elements in polished rice were Ca>Mn>Zn>Fe>Cu>Se, with the data of Ca 65.809, Mn 9.915, Zn 7.988, Fe 6.025, Cu 2.205 and Se 0.024 μg·g-1. The mean contents of six elements in rice bran were Ca>Mn>Fe>Zn>Cu>Se, with the data of Ca 297.221, Mn 125.705, Fe 62.189, Zn 26.761, Cu 14.580 and Se 0.061 μg·g-1. (2) Mean contents of these elements in rice bran were significantly higher than those in polished rice. The content of Mn in rice bran was 13.07 times as much as that in polished rice, and the contents of Fe, Cu, Ca, Zn and Se in rice bran were respectively 12.76 times, 7.48 times, 5.07 times, 3.56 times and 2.71 times as much as those in polished rice. (3) The content of Ca in the black polished rice was significantly higher than that in the white polished rice and that in the red polished rice. The content of Mn in the white rice bran was significantly higher than that in the black rice bran and that in the red rice bran. The contents of other elements were not significantly different among the various color kinds of rice. (4) Under three various environmental conditions, there was significant positive correlation between the contents of Zn and Mn in the polished rice, the contents of Fe and Zn in the rice bran, the contents of Se in the polished rice and in the rice bran, the contents of Mn in the polished rice and in the rice bran. But there was significant or extremely significant negative correlation between the contents of Fe and Ca in the rice bran.
