摘    要:采用常规生化分析方法,研究了我国主产区薏苡仁的保健品质和加工品质.结果表明,薏苡仁含有丰富的薏苡仁酯、薏苡仁多糖、三萜类化合物,其平均值分别为44.60 mg.g-1、59.03 mg.g-1、22.83 mg.g-1;薏苡仁属高淀粉质食物,平均淀粉含量为56.42%,直链淀粉为4.78%.我国薏苡仁是优良的药食同源经济作物,其保健与加工品质特性与品种、产地密切相关.

Abstract:The health and processing qualities of Chinese Coix lachryma-jobi kernels were investigated with the method of biochemical analysis.The result showed that C.lachryma-jobi kernel contained abundant coixenolide,coixan and total triterpenes,and their average contents were 44.60 mg·g-1,59.03 mg·g-1 and 22.83 mg·g-1 respectively.C.lachryma-jobi kernel is a kind of starchy foodstuff,which contains 56.42% of starch in total,and 4.78% of amylose.Chinese C.lachryma-jobi kernel is a good functional foodstuff.Its qualities change with the varieties and producing areas.
