中国乳品消费及影响因素研究

摘    要:总结1995年以来中国乳品消费的现状、特征,分析消费偏好、收入水平、价格、城镇化、人口及结构对乳品消费的影响后,发现随着中国人口、收入的增长,城镇化进程的加快以及乳品质量安全水平的提高,中国乳品消费增势显著。以城镇居民为例,2011年其奶类消费量为21.08kg/人,为1995年的2.8倍,年均增长6.58%;家庭人均乳制品支出234元,扣除通胀因素后比1995年增加了4.2倍;乳制品支出占食品支出比例由1995年的1.78%增加到2011年的4.25%,并趋于稳定。展望未来,中国乳品消费仍具有较大潜力,并为此提出促进乳品消费的政策建议。

Abstract:After summarizing the status and characteristics of China's dairy consumption, and analyzing the influencing factors, such as consumer preference, income, price, urbanization, the population and structure, we found that China's dairy consumption has increased obviously with the increasing of population and income, the development of urbanization and the improving of dairy quality safely. Taking urban residents as an example, the per capita consumption of dairy was 21.08 kilogram in 2011, which increased 2.8 times against 1995 with annual growth rate at 6.58 percent; the per capita expenditure on dairy products was 234 RMB in 2011, which was 5.2 times more than 1995 after deduction of inflation; the proportion of dairy products expenses of food expenses rose from 1.78 percent in 1995 to 4.25 percent in 2011, and it went to be stable. Looking forward to the future, there is a great potential in china's dairy consumption, and we put forward suggestions to promote dairy consumption.
