| 摘 要： | 以富硒章丘大葱为原料,研究辐照剂量对葱茎、葱叶和葱根中总硒和有机硒含量的影响。结果表明：辐照能明显降低大葱各组织部位中总硒和有机硒的保存率,并且随着辐照剂量的增加,保存率呈降低的趋势,辐照剂量为10.0kGy时,总硒和有机硒的保存率仅为50%左右。冷冻真空干燥处理对硒的保存率高于鼓风干燥方式。有机硒的含量占到总硒量的90%以上,大葱各组织部位中硒含量葱叶〉葱茎〉葱根。

| Abstract: | The effects of irradiation on the contents of total and organic selenium in the root,stem and leaf of welsh onion were reasearched taking the selenium-enriched welsh onion from Zhangqiu as the materials.The results showed that irradiation had significantly decreased the preservation of total and organic selenium,and the content of selenium decreased with the increasing of irradiation dose.The preservation of selenium was only about 50% at 10.0 kGy of irradiation dose.The preservation of selenium treated by ... |
