| 摘 要： | 对云南西双版纳小耳猪眼肌和股二头肌的肌纤维直径、密度和肌束内肌纤维数进行测量,结果表明:眼肌和股二头肌的肌纤维直径分别为54.49±19.34μm和56.96±20.68μm;肌纤维密度分别为212.35±20.68根/mm2和208.04±21.66根/mm2;肌束内肌纤维数分别为75.4±3.2根和71.9±4.06根。与杜洛克、长白猪相比,其肌纤维直径显著地小而肌束内肌纤维数又显著地比较大。这些特性与其肉质细嫩有一定关系。

| Abstract: | The muscle fibre diameter, density and fibre number of muscle fasciculus in m. longissmus dorsi and m.biceps femoris of Xishuangbanna Small-Ear pigs were measured. The results indicated as follows: 1.The fibre diameters of m.longissmus dorsi and m.biceps femoris were 54.49±19.34μm and 56.96±20.45μm, the muscle fibre densities were 212.35±20.68/mm2 and 208.04±21.66/mm2, the number of fibres in a muscle fasciculus were 75.4±3.2 and 71.9±4.06. 2.The muscle fibre diameters of Xishuangbanna Small-Ear Pig were obviously smaller (P<0.01), the number of fibres in a muscle fasciculus were obviously denser (P<0.01) than those of Duroc and Landrace. These characteristics of the muscle fibre of Xishuangbanna Small-Ear pigs has some relation to their meat tenderness. |
