紫甘薯色素在块根中的分布及稳定性研究

摘    要: 以日本引进的紫甘薯品种为试验材料,研究了甘薯紫色素的稳定性和在块根中的分布。结果表明:甘薯紫色素属于花青素,其在酸性条件下较稳定,对热、氧化剂、金属离子的稳定性较强,是理想的食用天然色素。甘薯色素含量为表皮>皮层>整薯>中心薄壁组织。引进品种种子岛紫整薯的色素含量比目前生产上种植的山川紫高61.13%,块根产量比山川紫高11.91%,可代替山川紫作为色素专用品种加以推广利用。

Abstract:The distribution and stability of the purple pigment in sweet potatoes from Japan were studied in this paper. The result shows that the pigment of Taneshimamurasaki belong to anthocyanin, the pigment is stable at the acid condition and display high resistance to heat, oxygenant and mental hydronium, it is the optimum edible nature pigment. The content of the pigment decreased from epidermis, cortex, earthnut to core thin wall tissure. The pigment content of Taneshimamurasaki is higher 61.13% than that of Yamakawamurasaki. Meanwhile the yield of Taneshimamurasaki is 11.91% than that of Yamakawamurasaki. So Taneshimamurasaki inclined to become the special ty of pigment extraction as the substitute for Yamakawamurasaki. higher variety of pigment extraction as the substitute for Yamakawamurasaki.
