| 摘 要： | 随着分子生物技术和方法迅猛发展及其在营养学中的应用，营养素与基因表达的相互作用已成为研究的热点。现就膳食中的蛋白质和氨基酸、脂类、碳水化合物、矿物元素、维生素对基因表达的调控作用进行综述。
