贵州典型植烟区烟叶挥发性香气成分与香型风格关系分析

摘    要:用GC—MS方法对贵州典型植烟区烤烟挥发性香气物质进行对比分析。结果表明:黔西北、黔西、黔西南烟区的类胡萝卜素类香气成分总量低于黔南、黔东北烟区;黔西北、黔西烟区的茄酮、类西柏烷类成分总量、糠醛、棕色化产物类成分总量及其他香气成分总量均高于黔南、黔北、黔东南烟区;香气成分组总量与评吸总分呈显著正相关,显示致香化合物量与感官评价的一致性;各类香气物质按地区聚类分析,黔西部地区的黔西北、黔西及黔西南(“清甜香”烟区)与黔东北、黔北及黔东南(“醇甜香”烟区)植区分别聚为两类,表明贵州植烟区烟叶香型风格与香味物质含量差异性相关,且地域分布呈现规律性。

Abstract:The volatile aroma components of tobacco from typical planting areas in Guizhou were analyzed. The total of carotenoid aroma components in west tobacco - growing of Guizhou was lower than the south and northeast , while the solanone, the eembratriendiol group, furfural, browning products group and other related aroma compositions were higher. The aroma components of total group and smoking score were a significant positive correlation, indicated the consistency of the amount of aroma compounds and sensory evaluation. The clustering analysis was divided into two categories between the western and the others planting areas, showed that the flavoring substances content differences associated with the style and planting areas. The chemicals of two kinds of aroma style between western Guizhou belong to "mildly sweet" and other areas belong to "alcohol sweet", there are differences in the quality and geographical distribution regularity.
