摘    要:该研究在淮北麻鸡宰杀及冷藏工艺过程微生物分析的基础上进行危害性分析,确定关键控制点。结果表明,应用HACCP理论指导生产,在生产过程通过控制车间环境卫生、加强操作人员卫生管理、严格工艺流程管理及监控、控制冷链温度等措施,可以减少鸡肉微生物初始污染,保证原料肉的质量安全。关键题:淮北麻鸡;宰杀;冷藏;HACCP

The Application of HACCP in Slaughtering and Refrigerating of Huaibei Partridge Chicken
Abstract:Based on microbiological analysis on slaughtering and refrigerating technology of Huaibei partridge chick?en,the hazards were analyzed and the critical control points were determined. The results showed that HACCP theo?ry applied to the production,primary infection of chicken microbe was reduced and the quality safety of raw meat was guaranteed. During the production process,workshop sanitation was controlled,the management of operation staff health was strengthened,the processing flow was managed and monitored strictly,and the cold chain tempera?ture was controlled.
