微切助互作技术辅助提取辣椒红色素的研究

摘    要:为研究微切助互作技术辅助提取辣椒中辣椒红色素的最佳工艺条件,本试验以辣椒红色素的吸光度和色价为指标,考察微切助互作技术辅助提取辣椒中辣椒红色素的影响因素,并通过正交试验确定最佳工艺。结果表明:最佳提取条件为Na2CO3助剂用量为5%(w/w),研磨时间为40min,溶液95%乙醇,料液比为1:70(g:ml)。在该条件下检测红色素色价,较热回流法提高了15.09%。

Abstract:Objective To optimize the Pressure-shear Induced Chemical Transitions(PICT) in extraction on capsicum red pigment from red pepper.Methods The optimum extraction parameters were investigated by one-factor experiment and orthogonal design.The content of capsicum red pigment was determined by absorbance and color value.Result The optimum parameters were as follows: Na2CO3 content 5%(w/w),grinding time 40min,95%(v/v) ethanol,solid/ liquid ratio 1:70(g:ml).Under these parameters,the color value increased by 15.09% comparing with the heat reflux extraction.
