不同辣椒籽资源的营养保健成分研究

摘    要:以产自河南和贵州地区的3份不同产地的辣椒籽为试验材料,测定其营养保健成分的含量。结果表明:产自河南地区辣椒籽中的蔗糖、维生素C含量分别为0.043%和3.448 6 mg/g,高于贵州遵义和花溪地区的辣椒籽。贵州花溪地区辣椒籽中的可溶性糖、葡萄糖含量分别达7.00%和0.863%,高于贵州遵义和河南地区的辣椒籽。贵州遵义地区辣椒籽中总膳食纤维、不溶性膳食纤维和可溶性膳食纤维的含量分别达712.9 mg/g、651.7 mg/g和61.2 mg/g,远远高于贵州花溪和河南地区的辣椒籽。3份辣椒籽材料间的持水力和膨胀率存在显著差异,以贵州花溪地区辣椒籽的持水力最大,达65.73%,河南地区辣椒籽的膨胀力最高,为1.00 mL/g。辣椒籽中的维生素C、膳食纤维含量较高,值得进一步综合利用。
