波槐F_1羊屠宰性能及肉质特性研究

摘    要:对波槐F1羊、槐山羊的屠宰性能和肉质特性进行分析,结果表明:波槐F1羊体高、体长、胸围、管围均极显著高于同龄槐山羊;波槐F1羊的平均宰前活重、胴体重、胴体产肉率、肉骨比等指标均显著或极显著高于槐山羊;波槐F1羊肌肉中氨基酸总量显著高于槐山羊,不饱和脂肪酸显著或极显著高于槐山羊;槐山羊肌肉中的超氧化物岐化酶的活力显著高于波槐F1羊,丙二醛的含量低于波槐F1羊,但差异不显著。

Abstract:Each of ten lambs of Crossbreed F1 goat between Boer and Huai and ten lambs of Huai goat 8-10 months old(five males and five females) were slaughtered for comparing the slaughter performance and meat quality characteristics.The results showed that the body-high,body-length,chest-girth,lag-girth,average live weight,carcass weight,meat percentage of carcass,meat quality and the ratio of meat with bone of Crossbreed F1 goat between Boer and Hai are significantly or very significantly(P<0.05 or P<0.01) higher t...
