天然虾青素提取及其稳定性研究进展

摘    要:虾青素因其诱人的感官呈色性及优良的生理功能一直备受人们的关注.因此,就有关天然虾青素的提取工艺技术与影响其稳定性的因素,如生物体自身、环境、金属离子、抗氧化剂和制备方法等进行了比对阐述.

Abstract:Because of the attractive coloring and excellent physiological function,astaxanthin had attracted a lot of attention.In this article,the extraction technology of astaxanthin and the factors affected its stability as following,own organism,environmental conditions,metal ions,antioxidants and preparation methods were compared and described.
