鲜切红地球葡萄粒用壳聚糖可食性膜涂膜保鲜的研究

摘    要:研究了不同配方的壳聚糖可食性膜对鲜切红地球葡萄粒保鲜效果的影响,测定了冷藏期间主要生理生化指标的变化。结果表明,用壳聚糖可食性膜涂膜处理能明显抑制鲜切葡萄粒的呼吸,延缓可溶性固形物和可滴定酸的降解,降低了水分的损失,大大减少了腐烂,其中选用2.0%的壳聚糖、1.5%的柠檬酸、0.5%的甘油、0.1%的苯甲酸钠制成的可食性膜处理组保鲜效果比其它组更为显著。

Abstract:The effects of different edible chitosan complex film on the storability of fresh - cut red - globe grape were studied, and some physiological and biochemical indexes were determined regularly. The results showed that the edible chitosan complex film treatment inhibited obviously the respiration intensity of fresh - cut grapes, lowered the loss of SSC and titratable acid, effectively decreased the rate of water - loss, maintained higher firmness and controlled postharvest decay. The optimum edible film was 2.0% chitosan, 1.5% lemon acid, 0.5% glycerol and 0.1% sodium benzoat.
