摘    要:采用了三因素三水平正交试验研究了培养基主要成分淀粉、豆饼粉及麸皮对柠檬酸生产菌黑曲霉H4002发酵结果的影响,同时采用梯度试验考察了丙酮添加对最后发酵酸度的影响。试验结果表明相对最优的黑曲霉培养条件为:36.9℃、300 r/min、发酵时间75 h,淀粉、豆饼粉及麸皮含量分别为18%、0.45%和0.45%时,柠檬酸酸度最高,为100.8 g/L。

Abstract:The effects of three main components of culture medium(starch,bean cake powder and wheat bran) on fermentation results of citric acid producing strain Aspergillus niger H4002 were studied by orthogonal experiment with three factors and three levels.Meanwhile,the effect of adding acetone on final fermentation acidity was studied by gradient test.The results indicated that the optimal conditions for culture of Aspergillus niger were 36.9℃,300 r/min,75 h of fermentation time.When contents of starch,bean cake powder and wheat bran were 18%,0.45% and 0.45%,respectively,the acidity of citric acid was the highest(100.8 g/L).
