啤酒糟蛋白水解液脱色工艺优化研究

摘    要:为了优化啤洒糟蛋白水解液脱色工艺,并使其得到更好的应用,考察了不同的脱色剂对脱色效果的影响,并通过正交试验优化了活性炭脱色条件.结果表明:颗粒状活性炭脱色效果较优;在活性炭脱色试验中脱色率和肽氮类物质的损失率的变化与各影响因素都表现为正相关;各因素对于脱色率的影响顺序为:添加量>脱色温度>脱色时间;对于肽氮类物质损失率的影响顺序为:添加量>脱色时间>脱色温度.较优的脱色条件为添加4%的颗粒状活性炭50%下脱色2.5h,脱色率达到36.72%,肽氮类物质损失率为20.96%.

Abstract:The aim was to optimize the decoloring conditions for hydrolysis of brewer's spent grains protein. The decolofing effect of different bleaching materials was tested. The decolofing condition of activated carbon was optimized with orthogonal test. The results showed that graininess activated carbon was the best bleaching. The decolorization rate and loss rate were positive correlation with all factor. The sequences of every factors for decolorization rate were amount> temperature> time, and for loss rate were amount> time > temperature. The better decoloring conditions were that the amount of graininess activated carbon,temperature and the decoloring time were 4%, 50℃ and 2.5h, respectively. At the same time, the under which decolorization rate and loss rate reached 36.72% and 20.96%, respectively.
