高压脉冲电场对葡萄酒中高级醇的影响

摘    要:通过GC/MS分析,研究了经高压脉冲电场处理后葡萄酒中高级醇的变化情况。结果表明:经一定条件的高压脉冲电场处理后,葡萄酒中多种高级醇的含量均有所变化。其中,对葡萄酒风味有负面影响的高级醇总含量有下降的趋势,而起正面作用的高级醇含量则略有上升。与这一变化相对应的是葡萄酒的刺激性减小,口感更为醇和。

Abstract:The content variation of higher alcohol in wine treated with high voltage pulse electric field was measured by GC/MS.The results showed that the relative contents of fusel oil decreased,the relative contents of phenylethyl alcohol were increased after PEF treatment.According with this variation,the treated wine was rich in remarkable aging aroma and enjoyable flavour.
