福建野菜资源及开发利用

摘    要:福建野菜资源共有236种,隶属79科,174属,其中蕨类植物11科11属12种,被子植物有68科163属224种,拥有较多野菜植物种类的科有:禾本科(35种)、菊科(26种)、豆科(13种)、百合科(10种)、蓼科(9种)、十字花科(8种)、伞形科(8种)、唇形科(8种)。紫萁、菜蕨、荠菜、量天尺、清明菜、落葵、马兰、马齿苋、黄花龙芽等为福建传统利用的野菜。文章对福建野菜的开发利用现状及途径进行了讨论。

Abstract:Fujian Province is rich in wild vegetable resources. There are about 236 species of wild vegetables belonging to 174 genera and 79 families. Among them there are 12 species belonging to 11 genera and 11 families of the Pteridophyta, and 224 species belonging to 163 genera and 68 families of the Angiospermae. The following families have the high number of species of wild vegetables: Gramineae (35 species); Asteraceae (26 species); Leguminosae (13 species), Liliaceae (10 species); Polygonaceae (9 species); Cruciferae (8 species); Apiaceae (8 species); Lemiaceae (8 species). Some of them are traditional species for utilization such as Osmunda Japonica, Callipteris esculenta, Capsella bursapastoris, Hylocereus undatus, Gnaphalium affine, Basell rubra, Kalimeris Indica, Portulaca oleracea, patrinia scabiosaefolia, etc. The present situation and the ways of rational exploration and utilization of wild vegetable resources in Fujian Province are discussed.
