羽衣甘蓝提取液抗氧化活性研究

摘    要:羽衣甘蓝提取液对羟自由基有明显的清除作用.清除率与其浓度呈正比;Vc和G对羽衣甘蓝提取液清除羟自由基有促进作用,而CuSO4和Ca2+对羽衣甘蓝清除羟自由基有抑制作用.羽衣甘蓝提取液对猪油自氧化有明显的抑制作用,且提取液的添加量与其抗氧化性呈正比.羽衣甘蓝提取液与Vc和柠檬酸有较好的协同抗氧化作用.

Abstract:The extract of kale(Brassica subspontanea)has an obvious function of removing the free radicals of hydroxyl,which is proportional to its concentration.Kale extract coupled with vitamin C and glucose helps to promote the removal ability,but CuSO4 and CaCl2 will inhibit it.The extract of kale shows obvious antioxidant activities on lard in auto-oxidation,and the antioxidant activities are proportional to the quantity of the extract added.Furthermore,we have also investigated the synergistic antioxidation of kale extract coupled with vitamin C and critic acid.The result shows that kale extract has considerable synergistic antioxidation when used in combination with vitamin C and citric acid.
