摘    要:壳聚糖是一种天然高分子化合物,具有无毒、安全、易成膜、抗菌等特性,在果蔬的贮藏保鲜中已得到广泛应用.为了对壳聚糖的开发利用提供参考,综述了壳聚糖的成膜特性和壳聚糖的抗菌性,并对壳聚糖保鲜前景进行了展望.

Abstract:Chitosan is a natural high molecular compound with the characteristic of non-toxicity,safety,easy membrane formation and antibiosis,and is widely used in storage and freshness preservation of fruits and vegetables.The paper reviews the membrane formation characteristic and antibiotic action of chitosan and its application in storage and freshness preservation of fruits and vegetables,and forecasts the development prospect to provide a reference for development and utilization of chitosan.
