长尾大眼鲷的含肉率及肌肉营养成分分析

摘    要:为了给长尾大眼鲷Priacanthus tayenus(Richardson)]种质资源的科学保护、开发利用、增殖放流及营养价值研究提供依据,采用常规方法对其含肉率和肌肉营养成分进行了测定。结果表明:长尾大眼鲷的含肉率为(73.28±0.55)%,肌肉中的粗蛋白、粗脂肪、水分和粗灰分分别为(19.32±0.03)%、(1.37±0.02)%、(77.35±0.35)%和(1.37±0.02)%;共检测出17种氨基酸,总量为14.96%(鲜样),其中人体必需氨基酸总量为6.26%,占氨基酸总量的45.66%,必需氨基酸的构成比例基本符合FAO/WHO标准,必需氨基酸指数为61.38%,鲜味氨基酸含量为5.86%,占氨基酸总量的39.19%。结论:长尾大眼鲷是一种含肉率较高,味道鲜美,营养价值较高的优质蛋白质海水鱼类。

Abstract:The fish rate and muscle nutrition component of P.tayenus were determined using ordinary standard methods to provide the scientific basis for germplasm resources protection,nutrition research,breeding industrialization and release.The results showed that the flesh rate was(73.28 0.55)%.And the contents of crude protein,crude fat,moisture and ash were(19.32±0.03)%,(1.37±0.02)%,(77.35±0.35)% and(1.37±0.02)% in fresh muscle,respectively.The total amount of 17 kinds of amino acids was 14.96%(fresh),with essential amino acids of 6.26%,accounting for 45.66% in total amino acids.According to nutrition evaluation in amino acids score(AAS) and chemical score(CS),the essential amino acid index(EAAI) was 61.38%.The constitutional rate of the essential amino acids accorded with the FAO/WHO standard basically.The content of tasty amino acids was 5.86%,comprising 39.19% in total amino acids.
