| 摘 要： | 黄曲霉毒素是一类强致癌物质,许多国家已将其限量标准提高,并已成为国际贸易中新的技术壁垒。概述了黄曲霉毒素的性质、种类、来源及其限量标准,介绍了食品中黄曲霉毒素B1检测方法的研究进展,并对其特点进行概括分析。另外,还介绍了近年来国内外牛奶中黄曲霉毒素M1的检测方法。

| Abstract: | Aflatoxin is a hard cancengenic substance,its limitatable index was raised in many countries,and have be come new technical barriers in international trade.In this paper,character,source and limitatable standard of aflatoxin was introduced.Research progress in determination methods of AFB_ 1 in food were described,their characteristics were summarily analyzed.In addition,The development at home and abroad about the method of detecting AFM_ 1 in milk in recent years was also introduced. |
