水葫芦水提取物的抗氧化活性研究

摘    要:采用热水浸提新鲜水葫芦得到水葫芦粗提液,对粗提液的还原力以及DPPH自由基、羟自由基、超氧阴离子自由基的清除能力和抗脂质过氧化能力进行测定。结果表明,当水葫芦粗提液的蛋白与Vc浓度相同时,水葫芦粗提液的抗氧化活性等于或高于Vc,其清除羟自由基和还原力远高于Vc,且抗氧化活性随提取液浓度的升高而增大,说明水葫芦水粗提物具有一定的抗氧化活性。

Abstract:The fresh Eichhornia crassipes was soaked in hot water to get the hydrophilic extracts.The reduce activity,scavenging activity of 1,1-diphenyl-2-picrylhydrazyl(DPPH) radical,scavenging capacity of hydroxyl radical,scavenging capacity of superoxide anion and inhibitory effect on lipid oxidation were determined.All determination results showed that the antioxidant activities of crude hydrophilic extracts from Eichhornia crassipes were equal to or higher than Vc with the same concentration as the protein content of crude extracts,especially the scavenging capacity of hydroxyl radical and reducing power were remarkably higher than Vc.Moreover,the antioxidant activity was increased with the increasing of the extracts concentration.It is obvious that the hydrophilic extracts of Eichhornia crassipes has antioxidant activity to some extant.
