摄食青草和人工配合饲料的草鱼肌肉营养成分分析及比较

摘    要:采用常规方法对摄食青草和人工配合饲料的草鱼(青草组和人工配合饲料组)的鱼肉营养成分进行了分析比较并评价了鱼肉品质.结果表明,青草组鱼肉水分、灰分、粗脂肪、粗蛋白含量显著高于人工配合饲料组草鱼鱼肉,青草组和人工配合饲料组鱼肉的游离氨基酸组成基本一致,均含有16种氨基酸,总量分别占鱼肉干样的1.5263%和1.4182%,其中 7种EAA(Leu、Ile、Phe、Try、Th r、Val、Lys)、1种HEAA(Arg)和4种NEAA(Glu、Ser、Tyr、Pro)的含量在青草组与人工配合饲料组间存在显著性差异(P<0.05),另外,必需氨基酸指数(EAAI)分别为132.34、36.29.支链氨基酸与芳香族氨基酸的比值(F值)分别为2.52、1.85,4种鲜味氨基酸含量分别占干样的0.3749%、0.1853%;两者之间均存在明显的差异.本研究结果表明青草组草鱼肌肉味道更鲜美,氨基酸组成更为合理.
